Below is a tutorial series I will always recommend, as it utilizes KiCad and runs through all the necessary functions one will use throughout a design, as well as the process of actually picking out necessary components, something that I thought many tutorials leave out.

Altium training

Some circuit design practice
A super common circuit used in countless electrical devices is a LM555 timer circuit, so a great challenge for beginners at this stage, after watching/ reading the introductory documentation for the software, is to now DESIGN! This includes drawing out schematics, assigning footprints, laying out the design, routing, and such. I think for those studying EE, this is also a great application of theory. Not studying EE? An astable LM555 timer circuit is, like I said, very common, so there are lots of examples and designs online. Happy designing!
